Chocolate, Cinnamon, and Lactose, Oh My!


Food allergies are the worst. In the spring of 2011, my body began having unfavorable reactions to both chocolate and cinnamon. It meant giving up chocolate cake, cinnamon rolls, and one of my all-time favorite things — mocha cinnamon lattes — but at least I could still have flavors like vanilla, caramel, and berries.

Then a couple of years ago I began experiencing some unwanted side effects from eating or drinking anything with lactose. As many of you know from reading about the death of my Keurig last fall, I have a serious coffee addiction.

(Don’t worry. My husband’s awesome family hooked our family up with a new one for Christmas! Nobody was more surprised than me and I was definitely the most thankful. A traditional pot is great, and I’m grateful to the fellow author who gifted me with one, but I use my Keurig for other stuff besides coffee — like water for oatmeal, hot tea, or mashed potatoes. But I digress….)

Creamer is essential to the elixir that allows me to write far past midnight. If the lactose-based ones didn’t work, I had to find an alternative. Thanks to ingredients like almond and coconut milk, I didn’t have to look very far. The cost of the ingredients is comparable to the pre-made stuff but this is so much healthier.

A few months ago, when my doctor diagnosed me with diabetes, I had to cut sugar as well. Now I’m more committed than ever to making healthier choices. It’s never too early to start, however, which is why I share these recipes with my VIP readers in a weekly reading guide sent out each Friday.
